Oolong is a partially oxidized tea, falling somewhere between green and black tea. It's produced by withering the leaves of the plant under bright sun, which helps to oxidize the leaf before it’s twisted and curled. Oolong’s nickname “dragon tea” is a reference to the long, dark, curly leaves. When you shake them out into your hand, you’ll see they look like little dragons. Fiery!
The producers of this particular Oolong, Zhen, are a collective of tea sommeliers and producers from China and Canada, who are dedicated to bringing the best of tea to the world.
With flavours described as “gentlemanly”, you’ll find hints of mineral, pipe tobacco, dark chocolate and dried peach in this single origin leaf. If you’re in the mood for a snack, this Oolong pairs beautifully with sautéed chanterelle mushrooms, aged Gouda and dried cherries.
