Calabria has one of the highest populations of organic farmers per capita in the world, so it’s only a matter of time before it’s also got one of the highest populations of people wearing yoga pants in the world. However, for the past 80 years, Calabria has been home to the Fazari Family Farm, which was founded in 1940 by the suspender-wearing Domenico Fazari and his 5 sons.
Their San Giorgio oil is one of the most reputable mono-cultivar olive oils in the world. Most olive oils are made using a few cultivars, or varieties, of olives. This one is made using just a single cultivar, the Ottobratica olive, which allows the full flavor of the fruit to come through.
The Fazari famiy has always focused on tradition in the creation of their globally recognized oils, but they also look toward the future, using technology like continuous cycle machinery to ensure that olive crushing follows olive picking almost immediately. This oil has notes of artichoke and green vegetables, making it the perfect thing to pair with bitter greens, soups and stews.
