MAKE YOUR FOOD SING
This oil is from Alentejano, Portugal, where farmhands sing in the fields while they work, as they've done for over a thousand years. The tradition, known as cante, which just translates to "sing", features songs about the hot, dry land sung by the people who work it.
The groves at Herdade do Esporão have existed almost as long as the singers have. An olive grove rolling over gentle hills and shallow valleys, it’s home to medieval towers and the occasional happenstance archeological find from the Neolithic era.
A family company that believes deeply in their responsibility to nature and the historical traditions they’ve become protectors of, the committed agriculturists at Herdade do Esporão use natural production methods and traditional, sustainable processes, creating oils from only olives they believe truly express the land.
Cordovil, Galega and Verdeal olives make the oil velvety smooth with notes of green leaves. For a dish that’s sure to have your guests singing for seconds, try drizzling this oil with fresh burrata and roasted grapes. The farmers of Alentejano would approve.
