AN ORGANIC OIL TO LEAD THEM ALL
The Douro region is one of the oldest recognized appellations in the world. It’s possible that the Familia Roboredo Madeira, who has been growing their olives and making their oils in the hills of Douro since the 17th century, have been there the entire time. Dedicated to the ecological preservation of the ancient lands where their orchards grow, the family harvests olives amidst juniper and rock roses, while endangered golden eagles soar above. The soil in Douro is stony, and situated on sloping hills. This, in conjunction with the dry heat of summer, has led to very specific methods of cultivation dating back to the 8th century. CARM stands for Casa Agrícola Roboredo Madeira, and the family are considered pioneers of organic farming in Portugal.
This extraordinary extra virgin olive oil is organically harvested according to strict codes in limited supply. Its fresh flavour harbours hints of raw olives, tomato, apple skin and pepper. Versatile, yet dynamic, it takes everything from salads to marinades up the rocky hills and out of this world.
