FLUTTER GOES MY HEART
Rumour has it that this chocolate factory is powered by the tiny wings of thousands of hummingbirds. That’s a lie. In truth, it’s powered by Drew and Erica Gilmour, two ex-aid workers who make it their top priority to create fair working conditions on all of their farms, so to ensure a truly ethical chocolate bar.
This particular bar is made from single-origin Trinatario beans, carefully cultivated by growers from the Dominican Republic. Extra care comes through in the taste—deliciously dark, and surprisingly fruit-forward. It was even recognized as the Academy of Chocolate’s best-in-competition, winning the coveted Golden Bean.
Where does the name actually come from? The Gilmour’s were inspired by the hummingbird’s migration between North and South America, the same route that many of their beans travel.
